¼ cup pure maple syrup
¼ cup olive oil (or other neutral oil)
1 tbsp ground cinnamon (or more to taste)
½ tsp vanilla extract (optional, for warmth)
Pinch of salt
6 Medjool dates, chopped (added after baking)
Instructions
Preheat oven to 350°F (175°C). Line a large baking sheet with parchment paper.
Mix dry ingredients: In a large bowl, combine oats, nuts/seeds, cinnamon, and salt.
Prepare wet mix: In a small bowl, whisk together olive oil, maple syrup, and vanilla (if using).
Combine: Pour the wet mixture over the oats and nuts. Stir until everything is evenly coated.
Add apples: Gently fold in the chopped apple pieces.
Bake: Spread the mixture evenly on the prepared baking sheet. Bake for 25–30 minutes, stirring once halfway through, until golden and fragrant. Keep a close eye near the end to avoid burning.
